Nothing beats this side for me. It's way too easy to get bored of veg, especially bog standard boiled veg, which isn't good on the Atkins diet. This recipe both brings out and gives your Broccoli so much flavour! When I take it out of the oven at University the girls I live with are always trying to catch a whiff because it just smells so good!
What you'll need (for 2 servings):
1 Tbsp Olive Oil
Salt & Pepper
3 Garlic cloves
How to do it:
1.Chop broccoli into small florets and spread out in an oven dish. Chop the garlic cloves in half - there's no need to peel them because you won't actually eat them!
2. Throw in the garlic, a little shake of salt and pepper and cover with the dish with the olive oil. Mix it all up with your hands so all the broccoli is nicely coated.
3. Cook in the oven at 180°C for 25 minutes, giving the dish a shake about half way through.
4. Serve and enjoy! Goes great with meat or fish.
